you people are crazy. i LOVE gravy with giblets and i made stuffing with giblets three years ago and it was good as well. the trick with giblets is you just cant think about where they come from, you just have to enjoy their taste. but yes, they should have told you in advance. in fact, when i made my stuffing, i made two kinds, one with giblets and one without for people who didn't want to eat a turkey neck and liver, or whatever the hell giblets are.
